This Week’s Happenings 10/29-11/4

We had a beautiful week here in Swaziland this week. The weather was gorgeous (much different than the sweltering November we experienced last year) and Ben even had some meetings cancelled in town so he was home (working regular schedule) all week.  Next week is a different story, but this week was nice!

We started our "Thankful Tree" this week.  I drew a large tree on some chart paper and posted on the wall with fall colored leaves.  Each day in November we will work together as a family to say what we are thankful for and put on our tree.  Basically Mikayla gives us an idea and we fine tune it!  So far she is thankful for food (especially the people who make corn), art supplies, toys and maps!

On Wednesday we passed out some candy to our neighbors and they graciously allowed us to let Mikayla trick or treat at their houses.  Since we only have a few Americans here that understand the concept, we trick or treated at both front and back doors.  Mikayla was so excited and had so much fun!  Ben even got in on the action too.

Joe’s birthday was a couple of weeks ago, but we were waiting until the sisters got back in town to really celebrate.  He requested a dessert themed party, so on Friday and Saturday I spent the day making desserts!  We ended up with quite the spread and all were on a sugar rush when it was through!  We had donuts, churros, cookie dough brownies, frozen cheesecake, fudgy oat bars, and rainbow cupcakes with icing!  We ended the sugared evening with a showing of A Bug’s Life on our "screen" outside!

Today we have had another lazy Sunday filled with a walk to the river to skip some rocks, tomato basil soup (thanks Joe) and then plans to grill out tonight!  Last weekend we introduced Mikayla to "Family Reading Time".  Basically this is where we all take our respective books and spend some time reading (or in Mikayla’s case looking at pictures).  Last weekend she spend almost 45 minutes "reading" and then asked for it again later in the week.  This morning she asked if she could paint during Family Reading Time.  She spent a good hour painting this morning!  She is doing so good at painting and staying in the lines and is so proud of herself when she does so.

Christmas Can Officially Begin

In case you missed my Facebook update this morning, Christmas Season can officially begin in our household.  Today was Cinnamon Roll Day!  Mikayla and I spent the morning making my Grandma Clark’s famous cinnamon rolls.  Which in my mind symbolize Christmas.  I love them so much!  Ben asked today why we don’t make them more often and I said they would lose their mystique if we made them more than just at Christmas time.  Last year I posted about the tradition, you can read about it here if you want.

Since cinnamon rolls are so big for my family, I have spent the past couple of years making triple or quadruple batches to fulfill our desires for their gooey goodness.  However, this year I just made one batch since I didn’t figure they would ship very well (sorry guys).  It was strange only making one batch and we were finished before lunch (this has never happened on cinnamon roll day)!  We had to make a few slight alterations (like swapping honey for the corn syrup), but they still taste a little like home.  To all the Clark family out there – we will be enjoying some cinnamon rolls this week while thinking of you!

We didn’t manage to take but a couple of pictures today (Ben left with the camera), but here are some pictures from several years ago when my sister and I made cinnamon rolls with my Grandma.

First Thanksgiving in Swaziland

We have had many firsts since being in Swaziland, but as Ben mentioned in his Thanksgiving post this was probably one of the most memorable.  Although we didn’t get to celebrate with our family and friends from back home, we did get to celebrate with some very special Swazi friends.  And even though I didn’t get to make deviled eggs with my grandma or eat my sister’s green bean casserole, we still had some delicious eats.  Ben was in town all week, so we ended up having Thanksgiving a few days late on Saturday.  Here is a run down of our menu / evening in pictures.

Food:

Let me preface the food run down – we can get most foods we want in Swaziland, but some are very difficult and near impossible to find.  We searched around for a turkey and ham in all our usual spots and then got a great lead on a turkey from Sharon (the childcare director) and the sisters stumbled upon a hunk of ham at a more "Western" grocery store.  Some of the foods we had to alter a bit, but I will explain that more as we go.

Turkey before.  This was our first attempt at making a turkey and I think it turned out pretty well.  We made a rub of olive oil, fresh rosemary, garlic, Italian seasoning, black pepper, salt and then a dusting of cajun seasoing over the whole bird.  The we stuffed him with celery, onion and carrots and roasted slowly until the cute red button popped!

Steve Kickert’s sweet potatoes, which I think were a recipe from his grandma (but I could be wrong on that one).  I know you are thinking, those just look like regular potatoes, but they are sweet potatoes.  In Swaziland the sweet potatoes are red on the outside like we are used to, but on the inside they are white.

Turkey all cut up and then green beans, mashed potatoes and the world’s best gravy courtesy of the sisters.  Seriously wish I could make gravy as good as this!

Sausage and apple stuffing.  I found this recipe last year and it has become my go to recipe for stuffing (which ironically I only make at Thanksgiving – I think I will change that though).

In this picture we have my Grandma Clark’s famous cooked apples and my Grandma Adkins deviled eggs.  Just a note on the deviled eggs.  We were unable to locate sweet pickles so Ben took some sweet and sour pickles we found and altered the juice.  It wasn’t quite the same, but it worked well enough.  We also had some butternut squash and a wild green (weed that resembles Spinach) cooked up by Sharon.

For dessert we had an apple braid (not pictured, but posted about previously).  We also had this pie.  It looks like pumpkin pie and tasted like pumpkin pie, but was actually butternut squash pie.  I couldn’t find pumpkin, but butternut squash has the same texture and similar flavor so we rolled with it.  In the end we were very pleased with the outcome!  You should try it sometime.  Just take your butternut squash, cook it and puree.  Then use like you would canned pumpkin.   I used this recipe my friend Catherine found for me.  For the crust I made a recipe found in Betty Crocker cookbook.  I originally made the crust found in the recipe above, but it ended up crumbly for some reason.  If I were to do over again I would have covered the edges of the crust with foil so they wouldn’t burn.

**To cook the butternut squash cut into large chunks and put in a shallow microwave dish – skins up.  Add a little water to the pan and cook until tender.  Take peel off and then mash with a spoon or fork.

The company:

We ended up having 10 guests including us.  The three of us, Sharon (childcare director), Esau (Maintenance manager), Johannes (Agriculture manager), Ncobile (Office cleaner), Ndumane (used to live at the hostel and now works in maintenance), Mrs. Mamba (works with pyscho social department and is also a teacher at the primary school), and Mzamo (works in the office with Ben doing HR).  The sisters helped with some of the cooking but didn’t make it to the meal.

The Entertainment:

After dinner we had the usual conversation time (be sure to read Ben’s post mentioned above for details on this) and then introduced them to the Wii!  It was great fun and of course Mikayla bopped around and was Miss Social Butterfly!  We also enjoyed a great Thanksgiving song courtesy of Mikayla.

Another Busy Weekend

We had a big weekend full of visits.  On Friday we met up with some close friends for a night of relaxation and a backyard fire.  It was great to be around friends, sit back and relax!  Three day weeks are hard! 

Ben’s mom came to town Saturday and Sunday.  While in town we hit up Jackson’s Orchard for some fall fun.  Mikayla got to go on a hayride, pick out her own pumpkin, drink some more apple cider slushies and experience the mad rush that is Jackson’s on a Saturday in October!  Then we enjoyed a nice dinner at home.  On Sunday we went to Cracker Barrel for breakfast.  I love me some Cracker Barrel breakfast (or food in general)!

On Sunday, Mikayla and I hit the road to Somerset.  Way back in 2000, my high school basketball team one the Class A State Championship.  For most schools this isn’t a huge deal, but for smaller schools like SHS, it is huge!  Our high school now has a Hall of Fame and so our team was inducted into it on Sunday.  It was fun to catch up with some old ball friends and really special to have our team picture hanging just below my dad’s baseball team picture which has also been inducted in the Hall of Fame.  It was a quick trip, but a fun one.

Colorado Day Two

Despite getting up early, going to bed late and not getting great naps, Mikayla still woke up at 6:30 this morning.  What in the world was she thinking?  When our alarm went off at 8:30 (wishful thinking 😉 ) we had already, showered, packed and eaten breakfast!  Our first stop today was to the Butterfly Pavilion.  We weren’t sure what to expect, but it turned out to be pretty cool.  It was basically a bug and spider museum.  They had all kinds of rare insects, spiders, tarantulas and a ton of butterflies.  We enjoyed looking at them all (well except maybe the spiders for me) and learning a bit.  We even saw a butterfly hatching from a chrysalis and Ben got to hold a tarantula.

After we left there we had a yummy Thai lunch and then drove on to Fort Collins, CO.  Mikayla actually fell asleep in the car so we ended up sitting in the parking lot of REI and taking turns going in and shopping while she napped.  Then we concluded the evening with a couple of Brewery tastings and dinner with a friend from BG.  It was a nice relaxing day.  Here are some shots of the Butterfly Pavilion.

Field Trip #2

Disclaimer:  I forgot my camera at home so there are limited pictures.  Pictures that I post have been “borrowed” from other people.

Week two of summer vacation has come and gone and that meets it is time to update on our second field trip (in case you missed field trip #1 you can check it out here).  Our second field trip was to my hometown, Somerset, to await the arrival of my niece.  My sister went into labor (with her third child) on Sunday morning and Baby Taylor arrived on Sunday evening.  We spent the day at my parents house playing with Mikayla and my nephews.  We made bird feeders from pine cones, peanut butter and bird seed.  We ran up the hill and rolled back down.  We shot basketball.  I taught T-Bone how to set the table.  Had a yummy BBQ chicken dinner courtesy of my mom. 

Finally, we were able to head to the hospital to meet and greet the newest addition to the family:  Taylor Nicole Absher.  She weighed in at 8lb 5.5oz and was 21 inches long.  And a head full of dark brown hair, more than Mikayla had!  Everyone was excited to finally meet Baby Taylor, even Mikayla.  She loves babies.  Congrats go out to Christa, Kris, Tyson and Tanner on their newest bundle.

Little Dentist

If you have seen Mikayla smile in the last little bit you will have seen a mouth full of teeth.  She currently has four top front teeth, three bottom front teeth, and one molar for a total of eight teeth.  The molar actually snuck up on us.  We didn’t notice it until it had already poked through her gums. 

When the first tooth appeared her dear Aunt Chel, who is a dental hygienist, gave her a toothbrush and toothpaste set and encouraged us to brush her teeth each day.  She has always been a fan and actually gets excited to see her toothbrush (unlike her daddy).  This morning she found Ben’s travel toothbrush and was walking around brushing her teeth.  It was so cute.
