This Week’s Happenings 5/7-5/20

We went on a walk last weekend to try and collect some firewood for our fire pit.  We weren’t very lucky with the wood, but Mikayla did find some rocks and decided that she wanted to paint them.  So on Monday I got out the paint and let her go to town.  She had so much fun.  Then we took them outside and she would "hide" them in the dirt and we would dig them up like a treasure.  Speaking of treasure, she has been having a lot of fun the last two weeks walking around the mission looking for "treasures".

Last week two visitors from the states arrived, Ted and Von.  They are friends of Cabrini from the Chicago area and came to help out where they could.  Ted was here for a week, but Von gets to stay until the end of the month.  We had them over for dinner a couple of nights last week, including a Mexican themed dinner with fish tacos and black beans!  On Sunday the boys decided to host an Asian cook off for Mother’s Day dinner.  In the end, everyone contributed a little something and it was delicious.  We were all royally stuffed by the end of the evening!  The menu consisted of Spring Rolls (Beth), Thai Coconut Curry soup (Ben), Fried Rice (Von), Tandoori Impala (Ted), Thai Grilled Chicken (Ted) and Korean BBQ pork belly lettuce wraps (Joe).  The sisters contributed doing the dishes, which we were all thankful for because there were a lot! 

On Monday I drove Ted into town to do a little souvenir shopping and drop him off at the airport.  We had a fun day chatting, shopping and hanging out.  And I was really proud of myself because it was my first solo trip to town and back.  I think I did pretty well!

Last week was a hard week for the Cabrini family.  One of our former staff members (who had only left two weeks ago), lost her two children (both around Mikayla’s age) when they drowned in the canal.  The funeral was on Sunday so we spent our morning there.  It was such a tragedy and hit everyone really hard.  Ben wrote about it on his blog and his words speak well to my thoughts on it.  You can read his post here.

When we first arrived in Swaziland, Glenn Cheney was here.  He is an author who was doing research for a book he was writing.  His book was recently published on Kindle, Nook and IPad.  It is called Love and Death in the Kingdom of Swaziland and gives a little insight to what life is like here.  There is even a snapshot of Mikayla and the twins in it!  You should check it out here!

We received word this evening that one of our night watchmen, Matthew passed away today.  He has been sick for awhile, but it is still tough.  Too many losses in such a short time here.  Mikayla really liked Matthew and would often watch him cut grass or spend the evening "chatting" with him.  We will surely miss Matthew.

With all that being said we have had a lot of ups and downs in the last two weeks.  Here’s to hoping that the next week is filled with more ups than it is downs…

A Mickey Themed 3rd Birthday

Yesterday evening we celebrated Mikayla’s third birthday with some friends here on the mission by going all out Mickey!  Here is a picture recap of the details from the party.

The Invitations

Although we were inviting mostly people right next door, I still wanted to create some invitations and couldn’t pass up these cuties.

The Decorations

These were made from Styrofoam balls painted black and then glued to make a Mickey head.  I also painted her initials on them because I had three.

Mickey head plates and party hats.  I hot glued two small black plates to a larger one. They weren’t very sturdy, but were cute!  The party hats were made from white cardstock (I would have used red if I had it) and then I glued on two circles for the ears, attached a string and was finished.  I added a little red polka dot bow to the cups to add a little color to the table.

The door sign – it is no Lara Mattingly banner, but it worked okay! I  replaced the "a’s" and dots on the "i’s" with Mickey heads.

The Games

We had two games.  The first was to see how many words you could make out of the letters in "Mickey Mouse Clubhouse".  Sister Barbara is a Scrabble fanatic so she blew everyone else out of the water!  We also had a drawing contest to see who could draw the best character from the show.  Mikayla was the judge.

During present time she would open the gift and then run over to Joe and put it on his lap.  By the time she was finished his lap was piled high with gifts.  Then of course she went back over and studied each one individually!

I think everyone enjoyed themselves and most importantly Mikayla had a blast!  It is still hard to believe that she is three!  Thanks to everyone who came out to the party, sent presents or called to wish her a Happy Birthday.  It was a great week of celebrating!

This Week’s Happenings 4/29-5/6

I didn’t do a This Week’s Happenings last week because our week was filled mainly with Mikayla’s birthday activities which I posted about here and here.  This week has proven to be very busy with out of country visitors and birthday party preparations.  We also spent a lot of time playing with birthday gifts she had already received.

This was a craft sent from her aunts and uncles and cousins.  She has named it Aunt Christa and plays with it like it is a doll.

On Monday evening two people from Switzerland arrived to visit Cabrini for a couple of days.  We hosted them, along with several other staff members for dinner on Monday night and breakfast on Tuesday morning.  For dinner we had lasagna, spaghetti, salad, homemade bread and a Snickerdoodle cake for dessert.  After spending the majority of the day prepping for dinner I was exhausted after our guests left.  Then we got up the next day and made a fabulous breakfast of fresh squeezed OJ, eggs, bacon (both grilled and fried), fried potatoes and more fresh bread!  It was delicious but we were so full we couldn’t find it in ourselves to eat much for lunch or dinner!  The best part about our guests (at least for Mikayla the best part) was that the girl’s name was Michaela!  She thought it was really silly to say her name for someone else!

We have converted Joe to being a Settlers of Catan player, so we had a fun evening of Settlers after Mikayla went to bed on Friday.  I won of course, which made the evening even more enjoyable!

We have officially entered "winter" here, but it didn’t feel much like it!  It warmed back up again this week after a quick cold spell last week so we spent some time in Mikayla’s swimming pool playing.  We played with both princess dolls and her tea set.  And she spent a lot of time riding her rocking horse swing, despite the heat.  She also spent some time playing in the mango tree with her Super Mikayla cape (thanks Cat, Dave and Molly) trying to save Flounder who was supposedly at the top of the tree!  Her imagination never ceases to amaze me.

At night when it cools off some Mikayla enjoys sitting and staring at stuff on her rocking horse swing.  I think it is really precious.

On Saturday we had Mikayla’s Mickey themed birthday party, more on that later.

But most exciting news of the week is that we bought plane tickets to head back to the US for a visit from August 19-September 24.  Plans while we are there are still up in the air and Ben will be working for most of that, but we were excited to get the tickets out of the way!   We will keep you posted of details as the time gets closer (and we have them of course)!

Mikayla’s 3rd Birthday

Saturday was Mikayla’s third birthday and in honor of the big day we spent time doing things she loves.  Like eating donuts, opening presents and going to the "park and play".  She still has a few more gifts to open, but we are saving those for her big (and by big I mean little) Mickey Mouse Clubhouse birthday celebration this coming Saturday.  Here are some snapshots we got from our day of celebrating!

Mikayla woke up to find her floor filled with balloons and "streamers" on her door.  We looked all over for streamers and couldn’t find any so I glued some newspapers together and cut them into strips.  Not quite a festive as colored streamers, but she loved them anyway!

Then we made donuts and of course we had to put sprinkles.  I used this recipe for the  donuts and they were delicious!  Best the day they were made and well worth the effort it required!

Then she got down to opening her presents.  The first is from us and was a toolbox filled with art supplies.  She loves "crafting" things and so this was a hit.

She also opened gifts from her aunts and uncles.  Here you can see her playing with her Candy Land game (thanks Aunt Chelsea and Uncle Tim) in her rocking new Toms (thanks Aunt Christa, Aunt Sarah, Uncle Christopher, Uncle Kris, Tyson, Tanner and Taylor).  There were other games and craft items included in these gifts, but I didn’t get pictures of them all.

After our donut breakfast and packages we hit up a park about thirty minutes down the road.  She ran and played and had a great time.  After some time at the park we went and grabbed lunch.  While at lunch Mikayla met an older couple (with a granddaughter her age) who she proudly told it was her birthday.  They then called in the owner and told him to go to the store and buy her a birthday cake…which he did!  They ended up inviting us to their house for coffee afterwards.  They had a ton of geese, rabbits, chickens, and dogs that Mikayla got to interact with.  She had so much fun.

Happy 3rd Birthday Mikayla!

How is it that three years have passed since I was in the hospital holding my sweet baby girl for the first time?  It has gone by crazy fast, but we have loved every minute of it!  This last year has been filled with a lot of firsts for Mikayla (and us) and a lot of fun new experiences.  Here is a quick picture recap of Mikayla’s third year of life!

This Week’s Happenings 4/9-4-22

I never got around to posting last week’s happenings because we took a long weekend trip to Nelspruit, South Africa.  I was too busy enjoying some family time, relaxing and seeing some really cool things (more about that in a bit).  The good news is that you will get two weeks worth of Kickert living in one!  Get excited!

After work on Friday we packed up the car and headed to Nelspruit, South Africa.  We visited here at Christmas time and it is a great place to go to get away and enjoy some "western" time.  On Saturday we did some shopping and picked up some goodies.  We of course stocked up on tortilla chips and salsa!  I also found a small craft store inside a store called Mica.  It was beautiful.  It was like going in a miniature Hobby Lobby.  I didn’t get much (besides a few supplies for Mikayla’s Mickey Mouse Birthday Party coming up in a few weeks), but it is nice to know that it is there.  Now I can start thinking crafts again and actually have somewhere to pick up the supplies.

On Sunday we loaded up the car and headed to Blyde River Canyon, which is about an hour away.  We experienced some of the most beautiful scenery we had ever seen.  The pictures don’t do it justice (you can see Ben’s full album here), but if you ever find yourself in South Africa, you should check it out.  We basically drove around and stopped at different viewpoints.  Some of the viewpoints you had to walk to (although not very far) and others were right beside the car.  Amazing!

Another amazing waterfall!

On Monday we laid low and did a bit more shopping.  We had planned to take Mikayla swimming, but it was windy which made it a little too cool for swimming.  She did go "swimming" in the bathtub that evening though!  On Tuesday Ben got up and did a little repair work on the vehicle, then we packed the car and headed back to Kruger National Park.  At first we didn’t see much of anything besides impala and a couple of elephants way off in the distance.  We were getting a little discouraged and then out of the corner of my eyes I saw these guys.

That’s right folks, we have two cheetahs.  Beautiful creatures and we were so close to them.  When we saw them, we immediately turned around and "stalked" them for a bit.  There were times when we were less than ten feet from them.  One of the best animal sightings we have seen to date.  Here are some more shots of the cheetahs (forgive us we took a lot) and some other animals we spotted.  (More pictures can be found here).

I think this guys lashes were beautiful.  We watched him eating for a bit and Mikayla kept calling him Horton!

The weather is starting to cool off a little at night time so we decided that we should build a fire pit in the back yard this week.  The other night we got out our new camp chairs (even Mikayla has one) and sat around the new fire pit enjoying some chili.  Felt a little like a fall evening!

This stubborn goat ended up on our porch one afternoon and we couldn’t get rid of him.  He fell on the porch at one time and because of the wax couldn’t get up and was stuck on his side for several minutes.  He was scared of the dogs, so he just froze.  Ben tried to chase him off with a broom, but we eventually had to pull him by the horns.  Unfortunately, I think the dogs got the better of him because we found him dead outside the fence in the morning.

I also managed to do a little baking and cooking in the last few weeks.  I made some pretty tasty chocolate chip cookie bars one day.  I really wanted cookies, but didn’t want to invest the time in making them, so I made bars instead.  The next best thing!  While in Nelspruit I found some recipes I want to try in the next few weeks.

This is the Piña Colada Cake I mentioned making for Easter dinner.  It was good, but not my favorite dessert.  If I make it again I will make a lot of changes and alterations to enhance the flavor.

For part of my birthday Rita made me this fabulous bowl.  She mentioned she uses one similar to it for making bread, so I gave it a go.  Look how pretty it is!  I would love to try it as a Deep Dish Chicken Pot Pie.

This Week’s Happenings 4/2-4/8

Happy Easter weekend everyone.  We hope you have a relaxing and joyful day of celebration!

This week I embarked on my bread making journey. For my birthday Ben’s parents gave me some Amazon money and I decided to use part of it to purchase a bread cookbook.  I decided on Artisan Bread in Five Minutes a Day by Jeff Hertzberg and Zoe Francois.  The bases behind the book is that you mix up a bread starter and leave it in the fridge (similar to sourdough starters).  When you want bread you take it out of the fridge, shape it according to the type of bread, let it rise and bake.  Easy peasy, lemon squeezy!  And tasty too.  I made a couple of Boules, ciabatta, and regular sandwich loaf bread.  There are lots of variations in the book and I can’t wait to try some of them out!  The only tricky part is that it calls for supplies we don’t have and for two racks in the oven (which we also don’t have).  So far we have managed and the bread has turned out delicious (even if we have to cook it for double the amount of time called for)!

One of Ben and mine’s favorite Easter treats is Reece’s Peanut Butter Eggs.  Unfortunately, you can’t find them here in Swaziland.  So when I saw a recipe for homemade Reece’s eggs on this blog, I thought I would give it a try.  And while they weren’t exactly the same, they were still tasty.  I made them a little large this go around, so next time I will make them a little bit smaller.  They were pretty rich!  Mikayla even jumped in on the action and enjoyed herself a little peanut butter!

Because of Easter weekend, Ben had a four day weekend.  So Friday we enjoyed a relaxing day at home as a family.  We hung out and were super lazy!  So lazy in fact that I think Mikayla got a little bored!  Amidst our laziness we managed to squeeze in a game of disc golf and a nice Thai dinner cooked by Ben.  We don’t exactly have a disc golf course, but we make up our own when we play.  For example, shoot to the post near the soccer field!

On Saturday we woke up early to go to the grocery store.  One the way in we stopped at a Country Club for Mikayla to play at their playground.  It is one of the best playgrounds in Swaziland and is the closest one to our house (thirty minutes away).  She had so much fun running from play area to play area.

Today is Easter Sunday and we once again plan to lay low and hang out at the house.  Tonight we are having Joe over for some Easter steaks on the grill.  I am also going to make a loaf of bread and a Pina Colada Cake (I will keep you posted on how it tastes).

Toddler School–Letter J

Mikayla got a stomach bug this week, so Toddler School was hit or miss.  We completed several activities at the beginning of the week, but the end of the week was a different story.  She liked learning about the Letter J, but I think mostly because she got to eat jelly beans!

She practiced coloring and staying in the lines by coloring some color coded jelly beans.  She did pretty good with this.  As you can see we are still working on correct gripping of pencils and crayons.  She hates holding them the right way!

Then we graphed them.  First I had her lay them beside the right color, one per square.  Then we took one off at a time and colored that square the correct color.  Then of course we had to eat one of each color.

I taught her the Nursery Rhyme Jack and Jill.  She loved this!  I drew them onto toilet paper tubes (please don’t judge my artistic abilities) and then she colored them.  We used them as we recited the Nursery Rhyme.  She took these guys with us everywhere we went for the rest of the week.  We also used Jack to act out Jack and the Candlestick.

We made a jelly fish by cutting a paper plate in half, coloring it and tying ribbon as the tentacles. 

I had also planned on doing some more jelly fish stuff, jar activities and Jack and the Beanstalk, but whens he got sick we didn’t get to most of them.  I may try to throw them in next week, but we will see.  I also think I will try and do some Easter activities next week, along with our next letter.  Anyone have any good suggestions for fun activities?

This Week’s Happenings 3/26-4/1

It is so hard for me to believe that Easter is one weekend away.  Anybody doing any fun Easter activities or crafts?  Where has the time gone?

Ben got home last Saturday, so we enjoyed lots of time with him over the weekend and then throughout the week.  It was nice to have him home again.  I think Mikayla enjoyed her daddy time this week as well.

He brought back lots of goodies from the states so we played with those and even ate some too!  He was even able to snag a box of our two favorite Girl Scout cookies (Tagalongs and Thin Mints) so we enjoyed those as well.

On Thursday, Mikayla and I headed into town with some other staff members to pick up my driver’s license (and some other errands for others).  I am now an official Swazi driver!  More than I can say for Ben!  Unfortunately, on the way in Mikayla got sick.  She threw up several times and was very lethargic and sleepy for the rest of the day.  The unfortunate thing about our situation was we were two hours from home and with other people so we couldn’t exactly turn around and head back.  She was a trooper though and curled up on my lap for most of the day sleeping.  By the time we got home she had a temperature of 103.6!  It dropped quickly as soon as we got some Tylenol into her system.  The next couple of days were filled with lots of time on the toilet and very restless nights.  Needless to say, we all took a day of rest on Sunday!  I am thankful to say she is on the mend and was feeling back to her regular self today!

I have mentioned Joe a couple of times, but haven’t posted a picture of him yet.  Here he is showing Ben a bottle of Chicago Bourbon he found at a store in town.

Ben and I plan on getting up at 3 am to watch the National Championship Basketball game.  It will make for a sleepy day tomorrow, but hopefully it will be well worth our time investment!

A Year Ago Today

A year ago today we said goodbye to one of the sweetest girls.  Ms. Bella Shoemaker has been dearly missed in the last year, but her legacy lives on.

When we swing, we talk about Bella and how much she loved to swing.

When I am laughing and playing with Mikayla I think of Bella and her beautiful smile and contagious laughter.  I can still envision her laughing each time she would "toot" on someone  or how she would take her chopsticks and slide them through her hands over and over again!  She was an amazing young lady who taught us all about how to fully embrace life and live with courage!

So today Mikayla is wearing a hand me down dress worn by Bella and we randomly say one of her favorite phrases:  Eat Up a Toe!

Her wonderful mother and my dear friend has recently started a non-profit in memory of Bella.  It is uniquely named (unique like Bella) The Eat Up a Toe Foundation, Inc. .  How appropriate!  She is raising money to help aid families who are battling cancer in their child.  She is amazing just like her daughter was!

They are having a fundraiser for the foundation on April 28 in Bowling Green – Spring Swing and Fling.  Check out their FB page for more details or do a Google search!
