This Week’s Happenings 3/26-4/1

It is so hard for me to believe that Easter is one weekend away.  Anybody doing any fun Easter activities or crafts?  Where has the time gone?

Ben got home last Saturday, so we enjoyed lots of time with him over the weekend and then throughout the week.  It was nice to have him home again.  I think Mikayla enjoyed her daddy time this week as well.

He brought back lots of goodies from the states so we played with those and even ate some too!  He was even able to snag a box of our two favorite Girl Scout cookies (Tagalongs and Thin Mints) so we enjoyed those as well.

On Thursday, Mikayla and I headed into town with some other staff members to pick up my driver’s license (and some other errands for others).  I am now an official Swazi driver!  More than I can say for Ben!  Unfortunately, on the way in Mikayla got sick.  She threw up several times and was very lethargic and sleepy for the rest of the day.  The unfortunate thing about our situation was we were two hours from home and with other people so we couldn’t exactly turn around and head back.  She was a trooper though and curled up on my lap for most of the day sleeping.  By the time we got home she had a temperature of 103.6!  It dropped quickly as soon as we got some Tylenol into her system.  The next couple of days were filled with lots of time on the toilet and very restless nights.  Needless to say, we all took a day of rest on Sunday!  I am thankful to say she is on the mend and was feeling back to her regular self today!

I have mentioned Joe a couple of times, but haven’t posted a picture of him yet.  Here he is showing Ben a bottle of Chicago Bourbon he found at a store in town.

Ben and I plan on getting up at 3 am to watch the National Championship Basketball game.  It will make for a sleepy day tomorrow, but hopefully it will be well worth our time investment!

A Year Ago Today

A year ago today we said goodbye to one of the sweetest girls.  Ms. Bella Shoemaker has been dearly missed in the last year, but her legacy lives on.

When we swing, we talk about Bella and how much she loved to swing.

When I am laughing and playing with Mikayla I think of Bella and her beautiful smile and contagious laughter.  I can still envision her laughing each time she would "toot" on someone  or how she would take her chopsticks and slide them through her hands over and over again!  She was an amazing young lady who taught us all about how to fully embrace life and live with courage!

So today Mikayla is wearing a hand me down dress worn by Bella and we randomly say one of her favorite phrases:  Eat Up a Toe!

Her wonderful mother and my dear friend has recently started a non-profit in memory of Bella.  It is uniquely named (unique like Bella) The Eat Up a Toe Foundation, Inc. .  How appropriate!  She is raising money to help aid families who are battling cancer in their child.  She is amazing just like her daughter was!

They are having a fundraiser for the foundation on April 28 in Bowling Green – Spring Swing and Fling.  Check out their FB page for more details or do a Google search!

This Week’s Happenings 3/19-3/25

Not much new or exciting happened this week.  The most exciting thing was that Ben came home!  Mikayla was so excited to see him, although to be honest I think she was most excited about the gifts he brought home for her!  She racked up and is loving every minute of it.  Let’s just say that we have plenty of toys, candy and extra items to last us for awhile!

Other than Ben’s arrival, we kind of laid low for most of the week.  I acted as "secretary" for a couple of strategic planning meetings and worked on some typing for the childcare staff, but other than that we played and hung out.

I just wanted to give a little shout out to my dad this week.  He resigned from his position as head coach of the girls basketball team in Somerset (from where I graduated high school).  He has been coaching girls basketball for 20 years or so (not all at the high school though).  He was even my head coach in middle school!  He was a great coach, but he was so much more than a coach.  He really believed in the players and worked hard to make them successful (both on and off the courts) and helped to shape them into beautiful citizens.  Not many coaches would ask their players to help out with a community dinner for the homeless on Christmas Eve and have a successful turn out with high school girls actually enjoying themselves.  I know his presence in the basketball program will be missed by all.  I love you dad!

This Week’s Happenings 3/11-3/18

For the most part our week was pretty uneventful.  We are now less than a week away from when we pick Ben up at the airport and we are so excited!  We have missed him so much.  The beginning of our week was pretty quiet, but things seemed to pick up a little towards the end.

On Thursday we headed into Mbabane with Joe and Joey to try and take care of some paperwork stuff.  I needed to get a Swazi license because my KY is about to expire.  What a process!  Anytime you have to deal with the government here it seems to be a process!  We called ahead to make sure we had all the important documents we needed, but apparently this was wasted.  As soon as we got there I found out I needed copies of more papers and they needed to be certified from the police department.  Luckily I had everything I needed, but ended up running around town for a couple of hours trying to get it all taken care of.  And in the end, I still don’t have a license in hand.  I had to leave all the paperwork and then come back in 1-3 weeks to pick it up.  Crazy!  Oh well, at least I got the bulk of it done.  Just seems silly to drive two hours to pick up a license!  But such is life I suppose!

As most of you might know, Saturday was St. Patrick’s Day.  I am not Irish, but I thought it would be fun to host a St. Pat’s dinner anyway.  So we had the "Americans" over for dinner on Saturday.  Joe cooked corned beef and cabbage, the sisters contributed some potatoes complete with all the fixings and I made Irish Soda Bread.  I also made some rainbow cupcakes.  These have been on my radar for a long time, but they are time consuming so I never got around to making.

Irish Soda Bread – four ingredients, no rise time and some of the easiest bread I have ever made.  Plus it was pretty tasty.  I think we will make this one again!

These guys didn’t the layering I had hoped they would, but they still reminded me of a rainbow.  And what is more important is Mikayla had fun helping to mix the colors up!

In edition to our St. Pats treats we also made granola bars (my friend Lara’s recipe) and my first ever quiche (courtesy of Betty Crocker)!  Both were tasty and hits with those that we shared them with.  I love quiche and it was amazing to me how simple it was.  The hardest part was the dough for the shell, and even that was pretty basic!  I would say I would be making again soon, but unfortunately Ben doesn’t like eggs so it might not happen for awhile.

We got some very exciting news from one of my best friends in BG this week.  I am not sure I can share the news yet, but just know that it was so exciting I actually started crying when she called to tell me.  That doesn’t happen too often!  Congratulations again friend!

We finished off our Dr. Seuss unit this week and Mikayla had so much fun.  I made some finger puppets for her and they just had to be a part of cooking!  Too cute.  Here she is showing Thing 1 how to add spices in!

This Week’s Happenings 2/22-3/3

Fair warning, this is going to be a rather long post because we have some catching up to do!  The last two weeks have been filled with traveling, meetings and parties!  Fun times.  When we last left you we were staying with Ben in Matsapha while he was at a week long strategic planning meeting. 

Check out last week’s happenings for the full update, but in addition to all that we Mikayla and I got our first African hair cut.  For the most part things turned out okay (a little uneven and more layers than I was expecting), better than expected really.  Mikayla did great.  She let them wash her hair in the big sink while I was getting mine cut and then sat there so still while hers was being trimmed.  The nicest thing about the cut is that it is shorter which makes it cooler, but also it looks decent without being fixed.  Since it gets hot pretty early in the day, most days I don’t feel like blow drying my hair.  So a cut that can go decently without a dryer is always a plus in my book!  (You can see pictures below)

On Thursday (2/23), Mikayla and I headed back to the house early to do some laundry and repacking.  Then on Friday we packed up the car (again) and headed for a mini-vacation/birthday retreat in St. Lucia, South Africa (not the Caribbean St. Lucia).  It was the perfect weekend getaway filled with beaches, animals and relaxation!  On Friday we just checked out the town, took naps and then went out for an excellent dinner at an Italian place called Alfredo’s.  The sisters treated us for my birthday gift.  Thanks again Sister Diane and Sister Barbara! 

On Saturday, we dressed in our swim suits, packed a light lunch and headed to Cape Vidal (a beach).  The fun thing about the drive to the beach is that you had to drive through iSimangaliso Wetland Park.  We weren’t expecting to see many animals beyond birds, but ended up seeing quite a few.  Rhinos, hippos, zebra, lot of antelope creatures just to name a few.  It was a nice unexpected addition to the trip.  And the beach was perfect.  The park limits the number of vehicles allowed in to 120 at a time, so it wasn’t overly crowded and not commercialized at all…our kind of beach.  And we even found a little cove with water that was less than two feet for Mikayla to splash around in.  She loved riding the waves, but I think she enjoyed herself more in the little cove.  And despite being sick (she had caught a little cold from her friend the previous week), she had blast!  We headed back to the cottage we were staying in early afternoon for naps and found that Ben and I were sufficiently burned despite putting on 50 SPF sunscreen.  I guess that is what happens when you are spraying on sunscreen on the windy beach!

These guys were actually out of the water when we got to this watering hole, but as soon as we drove up they hit the water.  This was the best shot I could get.

Speaking of our cottage, just wanted to put in a word for "The Wilds" where we stayed all weekend.  It was a self-catering place that was perfect.  They had a nice pool and play area (clubhouse, slide, etc.) for Mikayla.  The owners were friendly and helpful in our decisions on where to go and what to eat.  And the best part, unlike most self-catering places, they came in and cleaned each morning including dishes.  Perfect!  So we could cook if we wanted, but not worry about doing the dishes.  Love it!

Because of the sunburns we decided to just hang out around the cottage on Sunday.  We spent the morning playing in the pool and clubhouse.  Mikayla even had a play date with some monkeys in the clubhouse!  We ventured out for lunch at a little place that overlooked the estuary and were able to watch birds and hippos while eating our tasty meal.  That evening we headed back to the estuary and walked around the beach and lake.  Again saw some hippo heads and Mikayla even found her first few seashells.  I was a little disappointed with the lack of birds we saw, but to the birds credit we didn’t really go seeking them out either.  Maybe on our next trip!

On Monday we packed up and headed home.  We had a little bit of minor car trouble, but nothing that prevented us from making a timely return.

Tuesday of course was my birthday so I laid low all day and besides laundry didn’t do much of anything.  It was a perfect way to spend the day!  Ben was even able to take off part of the day to make me a Funfetti cake!  We had bought the cake mix in SA over Christmas and Joe brought in the Rainbow chip icing when he came in January.  That evening the Sisters cooked a delicious meal of ham steaks (a rarity that they brought back from SA), noodles with a phenomenal gravy and salad.  I ate more than my fair share and after my cake I was stuffed!  I also got ot open my birthday gift from my parents and Ben – A combination blender and food processor!  We used it to make hummus on the very first day.  Love it!

The rest of the week Mikayla and I caught up on housework and play time while Ben finished last minute work stuff before his big trip to the US (he leaves on Monday for three weeks).  On Friday we celebrated Dr. Seuss’s birthday by having a special birthday dinner.  Can anyone guess what we had?  Shame on you who didn’t guess green eggs and ham!  Actually that isn’t quite true.  Since ham is hard to get here, we had greens eggs and bacon.  We also hat Cat in the Hat Pancake Stacks (banana pancakes for the white and pancakes made with strawberry Jell-O for the red), Cat in the Hat banana / fruit strip circles and Pink Yink Ink Drink from One Fish, Two Fish, Red Fish, Blue Fish (Sprite mixed with strawberry Jell-O powder).  Last year Mikayla wasn’t much on this meal, but this year she ate it all up!  And throughout the meal she kept quoting Dr. Seuss stories.  I love that my daughter loves Dr. Seuss as much as I do!  We loaned out our books and Horton Movie to the hostel so they could use them, so we didn’t actually read any books on Friday.  But the next couple of weeks I have a ton of activities planned for our learning time!

Since Ben leaves on Monday we are laying low this weekend as a family.  And in case you hadn’t heard there is a tropical cyclone (Irina) that is set to hit the coast of Mozambique this weekend which could make things interesting around here.  We will keep you posted, but there is a good chance we will be without power and phone service for the next few days.

A Reading Machine

I have always enjoyed reading, but have not found much time for it the last couple of years for whatever reason. Now that my full time job is caring for Mikayla, I have found much more time for reading. That and we live where there is not much entertainment but each other and the occasional television show. Plus power outages make reading a necessity at night!  A couple of weeks ago Ben sat down and wrote out a list of books he has read since arriving in Swaziland. After reading through his, I decided it would be fun to jot down all of the books I have read thus far. Here are the ones I can remember so far.

Little Women – An oldie, but a goodie.  I cry every time I read this book.

Let Me Call You Sweetheart – A Mary Higgins Clark novel.  She used to be a favorite author of mine, but I am not sure if she still is.  I would have to read a few more books to decide.

The Harry Potter series (7 books) – I refused to read this series for so long, but after several pushes from close friends I decided to give it a go.  I am so glad I did.  I actually read the series in like two weeks, it was that good!

The Hunger Games Series (3 books) – I also loved this series!  The third book wasn’t great, but the first two were awesome. 

Kitchen Confidential – There were several books in the closet we now use as our pantry when we arrived and this was one of them.  It was okay, but got a bit repetitive.  Not a favorite of mine.

Poisonwood Bible – Another book that has been on my radar for awhile now, but I had never gotten around to reading.  It was a very well written book and I really enjoyed it.

Animal Farm – Ben read this one first and suggested I read it as well.  It was a decent read, but not really my style of book.

The Complete Adventures of Huckleberry Finn (4 books) – This was another free Kindle download and included four books (Adventures of Tom Sawyer, The Adventures of Huckleberry Finn, Tom Sawyer Abroad, Tom Sawyer Detective).  I loved the first two, but the last two were a bit of a stretch.

One September Morning – Easy read, but not that enjoyable.

Manny Williams Trilogy (3 books) – This was a murder mystery trilogy by Rick Murcer.  I really enjoyed this one and can’t wait to read more of his books.  The three books in the series were called Caribbean Moon, Deceitful Moon and Emerald Moon.

Dixie Divas – I read this one early on and can’t remember what it was about…must not have been that good!

Life From Scratch – Another easy read, but not that incredible.

Late Rain – Free kindle download that was a super quick read.

The Abbey – A well written murder mystery book.

Crossing the Bridge – Another one I read early on that I don’t remember very well.

Megan’s Way – A story about a mother who is dying of cancer but doesn’t know how to tell her daughter and friends.  This one really hit home with me because I read it right after I found out my uncle’s cancer had come back.

Stealing Faces – This one is about a guy who literally steals faces off of his victims.  Appetizing right?  It was actually a decent read though.

The Help – I loved this one.  I think it was one of the first I read when we got here, but it was really good.  I would eventually like to see the movie.

Kisses from Katie – This is a book about a girl from Tennessee who lives in Uganda.  She has "adopted" 13 or so kids from there and it talks about her story.  I have read her blog for awhile, so the story wasn’t that new to me.

Steig Larson series (3 books) – For those of you who aren’t familiar with this series the three books are called The Girl with the Dragon Tattoo, The Girl Who Played with Fire, The Girl Who Kicked the Hornet’s Nest.  The first book was really slow to get into, but once it got going was excellent.  The second book was great, my favorite in the whole series.  However, I could have done without the last one.  Way too many characters and plot lines were introduced for my liking.  All in all though, it was a good series and well worth checking out.

A lot of these books were free Kindle books I downloaded. I am a big fan of murder mystery books so that is what a lot of them ended up being. I have enjoyed the few series I read.   I have also read a lot of books from our closet here, but unfortunately after reading them we got rid of them so I am not sure what they were called. I know several of them were James Patterson books and some were just random books.  So all in all I have read about forty books in the last six months.  Crazy huh?  I am currently in between books and leave for a long weekend getaway in a couple of weeks if anyone has any good suggestions.

This Week’s Happenings 1/30-2/5

Is it really already February?  Time seems to be flying by.  We have been in Swaziland now for over six months and seem to be in a pretty good routine and feel 100% confident about our decision to move here.

And six months in, Ben is already prepping for his first trip back to the United States.  It will be mostly business, but he will get to see some family in Chicago so he is excited about that.  He will be gone March 5-24.  If you want more details on his trip just let us know.  We will miss him for sure, but will keep ourselves busy while he is away!

The puppies are growing each day and every once in awhile we will find them sneaking into our house to take a break from the heat.  Here is a shot from them the other day.

Mikayla got a couple of Signing Time DVD’s from her grandparents for Christmas and has really been loving them lately.  She is getting really good at signing along and really focuses on getting her hands in the right positioning to make the signs.  The other day I was watching her while she was watching a Signing Time and she was signing right along to the video and songs and was even signing words that hadn’t been taught, just shown.  So precious!

On Saturday night Joe (the new volunteer) came over and cooked a fabulous dinner for us.  He made braised rabbit, mashed potatoes and gravy.  We paired it with focaccia bread I had made Friday and some butternut squash chocolate chip cookies.  The rabbit actually tasted a lot like chicken and Mikayla ate it up.  Delicious!

On Sunday we had folks over for lunch to complete our mango chili pepper challenge.  I made crepes with a mango pepper marmalade and homemade whipped cream (super easy by the way).  Ben made grilled chicken breast strips marinated with a ginger infused mango heat glaze.  And Joe made a mango/pepper cocktail with Rum.  The sisters contributed a chili dish.  It was a tasty meal and we had a lot of fun experimenting with different flavors.  I love that I have more time to do stuff like that now!

Tonight, as most of you in the states know, is the Super Bowl.  Our satellite is actually broadcasting it live, so we decided to watch it.  The only downside is that live means 1:00am.  I guess we will just be tired tomorrow.  I told the guys I would be willing to watch it if we had appetizers, so appetizers it is at 1:00am!  I will contributing a homemade ranch dip with veggies and potato skins.  Can’t wait!

On a downside, my driver’s license is set to expire at the end of the month.  We tried to get this taken care of before we left but the courthouse wouldn’t let us renew it because it was too far out and hadn’t expired yet.  There is no way to renew overseas, so I have to get a Swazi driver’s license.  Unless we can figure something else out I will have to go through the whole shebang…written test and driving test.  Should be fun!  To say the least I am not looking forward to it at all.

News From the States

We got a very fun call from Tim and Chelsea last week (for those of you who don’t know Tim is Ben’s brother and Chelsea is his wife).  They called to ask Mikayla if she wanted a cousin to play with.  That’s right folks, we have another niece or nephew on the way.  Congratulations Tim and Chelsea!

The best part was during our conversation Mikayla looks at me and says, "Aunt Chelsea is having Baby Jesus"!  I didn’t realize Chelsea was that special, but apparently in Mikayla’s eyes she is.  Then today Mikayla asked if she could play with "that baby Aunt Chelsea was talking about".  I don’t think she quite understands what it means to be pregnant yet!  Even if she doesn’t fully understand she is really excited for her Uncle Tim and Aunt Chelsea and a new baby to play with!  And of course so are we!

This Week’s Happenings 1/23-1/29

This week has been filled with new and returning faces. On Tuesday the sisters had two adorable puppies delivered to their house.  Mikayla instantly fell in love with them and claimed them as her own!  She fought back many tears this week when we would take the puppies back to their house for bedtime and many anxious morning wake up calls to see the puppies.  She even gave up cartoons to play with them!

We also had another special arrival of Joe, Sister Diane’s nephew.  He will be at Cabrini for the next year (maybe two years) helping out with the agriculture programming, assisting in the office some and a little bit of everything else!  We had the opportunity to hang out with him some on Saturday on a day trip to Mbabane.  While there we did some shopping and even found a really nice park for Mikayla to play in.  Joe likes to cook, so we are going to work out an exchange where he cooks and I bake!

The kids also returned to the hostel this week after their summer holiday.  Mikayla and I took daily walks to the hostel to see all her friends and the puppies even joined us one day.  The after school program will resume soon so we will be once again helping out with that. 

Today we will be having a big lunch with Sister Diane, Sister Barbara, Joe and Janet.  I made my first angel food cake and it seems to have turned out okay; hopefully it tastes as good as it looks!  In the upcoming week we will be preparing for a mango/chili competition that Ben challenged us to.  Both are in season at the mission, so it should be interesting.  I am going to try and come up with some sort of baked item if you have any suggestions.

Lady and Tramp

We have two new members to the Cabrini family as of this morning.  The sisters were delivered two tiny puppies as replacements for Boy.  Mikayla instantly fell in love and named them Lady and Tramp.  (Of course the name is pending approval from Sister Barbara who is currently in Australia.)  Mikayla has been playing with them and carrying them around all afternoon and evening.  It was the first thing she said when she woke up from her nap today!  Here are some quick snapshots for those interested.
