{"id":954,"date":"2010-01-17T08:20:57","date_gmt":"2010-01-17T14:20:57","guid":{"rendered":"http:\/\/kickert.info\/blog\/2010\/01\/17\/thai-coconut-and-curry-soup\/"},"modified":"2010-01-17T08:28:41","modified_gmt":"2010-01-17T14:28:41","slug":"thai-coconut-and-curry-soup","status":"publish","type":"post","link":"http:\/\/kickert.info\/blog\/2010\/01\/17\/thai-coconut-and-curry-soup\/","title":{"rendered":"Thai Coconut and Curry Soup"},"content":{"rendered":"<p>Once again I break from my normal posts of esoteric ponderings and theo-political rants to bring you a recipe we have been cooking up (don\u2019t worry, I don\u2019t intend to make this a habit.)&#160; <a href=\"http:\/\/beth.kickert.info\/\">Beth<\/a> and I have continued our <a href=\"http:\/\/kickert.info\/blog\/2010\/01\/08\/pad-kee-mao-thai-drunken-noodles\/\">Thai cooking kick<\/a> and have loved what has come from it.&#160; Here is a hearty soup we have made a couple times.&#160; It is flavorful, spicy and brings a very pleasant sweetness.&#160; It is not overly complex and the ingredients can be found in the international section of most major grocery stores.&#160; If served with rice, it easily makes a meal.&#160; <\/p>\n<p><a href=\"http:\/\/kickert.info\/blog\/wp-content\/uploads\/2010\/01\/2010January062.jpg\"><font color=\"#555555\"><\/font><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px\" title=\"2010-January 062\" border=\"0\" alt=\"2010-January 062\" src=\"http:\/\/kickert.info\/blog\/wp-content\/uploads\/2010\/01\/2010January062_thumb.jpg\" width=\"324\" height=\"254\" \/><\/a> <\/p>\n<h5 align=\"center\">Thai Coconut and Curry Soup<\/h5>\n<p align=\"center\">[<em>Serves 6<\/em>&#160; \/\/&#160; <em>Prep time: 20min &#8211; Cooking time: 35min<\/em>]<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 Tbsp Vegetable Oil <\/li>\n<li>1\/2 pound cubed Chicken (Tofu may be substituted) <\/li>\n<li>Black Pepper <\/li>\n<li>1 Tbsp Thai Red Curry Paste <\/li>\n<li>4 cups (32 oz) Chicken Stock <\/li>\n<li>14oz Coconut Milk <\/li>\n<li>1\/4 cup fresh chopped Ginger <\/li>\n<li>2 Tbsp Lime Juice <\/li>\n<li>1 Tbsp Fish Sauce <\/li>\n<li>1 Tbsp Brown Sugar <\/li>\n<li>3-4 Large carrots sliced into discs <\/li>\n<li>3-4 Celery Stalks chopped <\/li>\n<li>1 stalk lemongrass, minced, OR 3 Tbsp. frozen prepared lemongrass (may be omitted)<\/li>\n<li>1\/2 large onion sliced <\/li>\n<li>1 Tbsp Minced Garlic (2-3 cloves) <\/li>\n<li>1 Bell Pepper chopped <\/li>\n<li>1\/2 \u2013 1 Tbsp Thai Chili Paste <\/li>\n<li>2 chopped Basil Leaves <\/li>\n<li>Cilantro (to garnish) <\/li>\n<li>6-8 cups Cooked Rice (roughly 1.5-2 cups uncooked rice) <\/li>\n<\/ul>\n<ul><a href=\"http:\/\/kickert.info\/blog\/wp-content\/uploads\/2010\/01\/2010January056.jpg\"><img loading=\"lazy\" decoding=\"async\" style=\"border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px\" title=\"2010-January 056\" border=\"0\" alt=\"2010-January 056\" src=\"http:\/\/kickert.info\/blog\/wp-content\/uploads\/2010\/01\/2010January056_thumb.jpg\" width=\"324\" height=\"220\" \/><\/a> <\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Put 1 Tbsp of <u><em>vegetable oil<\/em><\/u> in a large pot on medium-high heat. When it reaches temperature, add 1\/2 pound cubed <u><em>chicken<\/em><\/u>. Season with <u><em>black pepper<\/em><\/u>. Cook until chicken is done.<\/p>\n<p>Add 1 Tbsp <u><em>Thai red curry paste<\/em><\/u> and cook an addition 30 seconds while stirring continuously. Add 4 cups <u><em>chicken stock<\/em><\/u> (add less for a thicker soup), 14oz <u><em>coconut milk<\/em><\/u> and 1\/4 cup <u><em>chopped fresh ginger<\/em><\/u>. Bring mixture to a boil. <\/p>\n<p>Once mixture comes to a boil, add 1 Tbsp <u><em>lime juice<\/em><\/u>, (if you omit the Lemongrass, add an extra Tbsp lime juice) 1 Tbsp <u><em>fish sauce<\/em><\/u>, 1 Tbsp <u><em>brown sugar<\/em><\/u> 1\/2-1 Tbsp <u><em>Thai chili paste<\/em><\/u> (depending on how much \u201ckick\u201d you like your soup) and <u><em>vegetables<\/em><\/u> (carrots, celery, lemongrass, onion, garlic, bell pepper) Return mixture to a boil, reduce heat and simmer uncovered until vegetables have soften but are not mushy (approx. 15-20 minutes).&#160; <u><em>Salt<\/em><\/u> and <u><em>Pepper<\/em><\/u> to taste.&#160; <\/p>\n<p>Right before serving, stir in 2 chopped <u><em>basil leaves<\/em><\/u>.
