{"id":52,"date":"2009-07-11T03:04:01","date_gmt":"2009-07-11T03:04:01","guid":{"rendered":"http:\/\/kickert.info\/beth\/?p=52"},"modified":"2009-07-15T07:46:15","modified_gmt":"2009-07-15T12:46:15","slug":"veggie-patties-deliciousness","status":"publish","type":"post","link":"http:\/\/kickert.info\/beth\/2009\/07\/11\/veggie-patties-deliciousness\/","title":{"rendered":"Veggie Patties = Deliciousness!"},"content":{"rendered":"<p>As many of you may know, my husband and I have a garden in our backyard (check out <a href=\"http:\/\/kickert.info\/blog\/2009\/06\/23\/garden-update\/\">this <\/a>for some pictures).\u00a0 We only grow the veggies that we love, so coming up with summer veggie dishes is a breeze!\u00a0 The other night I discovered a new favorite&#8230;Veggie Patties.\u00a0 The idea stemmed from <a href=\"http:\/\/allrecipes.com\/Recipe\/Okra-Patties\/Detail.aspx?prop31=1\">this <\/a>recipe.\u00a0\u00a0 I altered the recipe to meet the needs of what we had on hand and here was the final result:<\/p>\n<ul>\n<li> 1\/2\u00a0 pound okra, finely chopped<\/li>\n<li>1 small zucchini, finely chopped<\/li>\n<li> 1 cup finely chopped onion<\/li>\n<li>2 jalapenos, chopped<\/li>\n<li> 1 teaspoon salt<\/li>\n<li> 1\/4 teaspoon pepper<\/li>\n<li>1 tbsp garlic salt<\/li>\n<li>Cajun seasoning (we didn&#8217;t have very much, but I would reccommend adding a generous amount).\u00a0 We like <a href=\"http:\/\/www.cajunspice.com\/\">Tony&#8217;s<\/a>.<\/li>\n<li> 1\/2 cup water<\/li>\n<li> 1 egg<\/li>\n<li> 3\/4-1 cup all-purpose flour<\/li>\n<li> 1 teaspoon baking powder<\/li>\n<li> 1\/4 cup cornstarch<\/li>\n<\/ul>\n<ol>\n<li><span> Heat 1 inch of oil in a large skillet to 375 degrees F (190 degrees C). <\/span><\/li>\n<li><span> In a large bowl, mix together the okra, zucchini, onion, jalapeno, seasonings, water and egg.
